- Authentic Preparation: Execute the full cycle of Edomae sushi preparation, including high-level fish butchery (cleaning, filleting, slicing), marinating (Kohada/Saba), and precise rice preparation (Shari).
- Counter Service: Interact professionally with guests at the sushi counter, showcasing traditional sushi-making techniques and providing top-tier hospitality.
- Quality Control: Maintain strict food hygiene, sanitation, and inventory standards in compliance with Swiss regulations.
- Team Collaboration: Work efficiently with the kitchen and front-of-house teams to ensure smooth service.
Requirements (Must-Haves)
- Experience: Minimum of 10 years of professional experience as a Sushi Chef, with a proven track record in authentic Edomae sushi restaurants (experience in Tokyo is highly preferred).
- Technical Skills: Mastery of traditional knife skills, fish aging/curing techniques, and counter-service execution.
- Language: Fluent or highly proficient in Japanese (for internal communication and authentic guest interaction). Conversational English or German is a plus.
- Work Ethic: Professional demeanor, high attention to detail, punctuality, and a strong sense of responsibility.
What We Offer
- Salary: From CHF 65,000 / year (Gross), strictly commensurate with your exact experience, skills, and speed.
- Work Permit: You MUST already hold a valid Swiss Work Permit (B or C Permit) OR an EU/EFTA passport.
- Visa Sponsorship: We CANNOT sponsor new visas or work permits for candidates living outside the EU/EFTA zone (e.g., directly from Japan). Applications requiring new sponsorship will be automatically rejected.
- Housing: You must already have your own accommodation or be able to secure it independently.
